What this site is

A publication about home fermentation and sourdough equipment. It is general information and opinion, written for a general audience.

It is not professional advice. Nothing here is culinary, nutritional, medical, food-safety or legal advice for your specific circumstances, and no professional relationship is created by reading it.

Food safety — read this one

Home fermentation involves handling food, and doing it badly can make food unsafe. Our guidance is general, and where safety numbers matter — salt ratios, brine concentrations, processing times — we deliberately do not publish figures of our own and instead point you at tested recipes from food-safety authorities. You are responsible for what you make and eat. Follow tested recipes from a recognized food-safety authority, use your own judgment, and if something looks or smells wrong, throw it out. If you have a medical condition, a compromised immune system, or are pregnant, consult a qualified professional before eating home-fermented food.

Some equipment discussed here is genuinely hazardous when misused — razor blades, vessels heated to 500F, and glass bottles under fermentation pressure. Handle it accordingly.

Accuracy, and the limits of our method

We write carefully and we source what we publish. We also state plainly that we have not tested the equipment we write about — our specifications come from manufacturer documentation, and our reasoning is ours. The method and its limits are set out at how we pick.

Product specifications, availability and prices change, and manufacturers change products without changing names. We do not warrant that everything here is current or error-free. If you find an error, tell us and we will fix it — see the editorial policy.

Prices displayed here come from a live feed and are stamped with the date they were verified. They are indicative, not offers. The price that applies is the one the retailer shows at the moment you buy.
